GETTING STARTED
USING YOUR NEW MILL
Everything you need to know to fill, grind, and store your pepper.
ROCK & PULL THE TOP CAP OFF
Grip the black cap and pull upward while pushing slightly to one side. That small rocking angle breaks the seal and the cap lifts right off.
Lift the reservoir off the base
With the cap off, lift the clear reservoir straight up and away from the base. Set both pieces on a flat surface. You'll fill the reservoir on its own.
Pour in your pepper
Open your Milly tin and pour directly into the clear reservoir. Fill to about three-quarters full. A little room at the top lets the burr mechanism do its job.
SNAP TOP CAP BACK ONTO BASE
Place the mill on a firm surface, align the cap so the interior spindle slides into the cap opening, then push straight down until it snaps.
dial in your coarseness
Hold the base and rotate the top to grind. To adjust coarseness, twist the small knob at the bottom. Clockwise for finer, counterclockwise for coarser.
DIAL IT IN
GRIND SETTINGS
Turn the base knob to adjust coarseness. Here's a quick reference for what works where.
FINE
salad dressings, sauces, eggs
MEDIUM
pasta, vegetables, fish
COARSE
steak, roasted meats, soups
EXTRA COARSE
crust, stocks, finishing
KEEP IT FRESH
STORING YOUR PEPPER
Whole peppercorns stay fresh for months or years when stored right. Here's what matters most.
KEEP IT SEALED
Store unused pepper in the Milly tin with the lid on tight. Oxygen is the biggest threat to freshness. Once opened, use within 6 months for best flavor.
KEEP IT IN THE MILL
The ceramic burr retains less residual oil than plastic, so pepper stored in the reservoir stays fresher between grinds than in a standard mill.
DO NOT REFRIGERATE
The fridge introduces moisture, which dulls flavor and causes clumping. Room temperature is all you need.
GRIND ONLY WHAT YOU NEED
Ground pepper loses its brightness within hours. Keep peppercorns whole until you're ready to cook. That's the whole point of the grinder.
TROUBLESHOOTING
THE CAP FEELS STUCK
The first removal is always the hardest. The fit loosens naturally with use. Grip the cap, pull upward, and push slightly to one side — that rocking angle releases the seal.
The mill isn't grinding smoothly
Tighten the base knob clockwise until the grind feels consistent, then begin adjusting for coarseness from there.
How do I clean the mill?
Do not wash with water. Run a small amount of dry white rice through the mill to clear residue from the burr. Wipe the exterior with a dry cloth.
The tin is pouring too slowly
The inner tray is designed for a controlled pour, but you can remove it entirely for faster filling. Lift it out, pour freely, then replace.
Do I need to clean the mill between pepper types?
No. Each Milly pepper variety comes with its own dedicated mill. Your black, white, and green each have a home.
