Salt & White Pepper Shrimp

Salt & white pepper shrimp is one of those dishes that proves you don't need much to make something great. A handful of ingredients, cooked right, and you get sweet shrimp, a little heat from the white pepper, and just enough salt to make everything come alive… simple isn't always easy, but this dish gets it right!

INGREDIENTS

  • 1 lb large shrimp, peeled and deveined
  • 1½ tsp kosher salt
  • 2 tbsp fresh white peppercorns, coarsely cracked
  • 1 bunch asparagus, cut into 3 inch tops
  • 2 tbsp neutral oil
  • 3 tbsp butter
  • 2 scallions, sliced, for serving
  • Rice, for serving
  • Optional: 1 to 2 tsp fish sauce

DIRECTIONS

  • Pat the shrimp dry and season with salt. Spread the cracked white pepper on a plate and press the shrimp into it, coating heavily on all sides.
  • Heat the oil in a pan over medium-high heat. Add the shrimp in a single layer and cook for 1 minute, until it starts to color.
  • Lay the asparagus tops over the shrimp. Cook for 2 minutes more, turning the shrimp once, until the shrimp is just cooked through and the asparagus is bright green and crisp-tender. Remove both from the pan.
  • Lower the heat and add the butter, swirling to build a quick pan sauce. Off the heat, add the fish sauce if using.
  • Toss the shrimp and asparagus back in the butter sauce to coat.
  • Serve over rice, finished with scallions.
